Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit covered for 10 minutes.

Season the Rice
In a small bowl, combine soy sauce, sesame oil, rice vinegar, and sake. Gently fold this mixture into the cooked rice and allow it to cool.

Marinate the Fish
In a bowl, combine diced tuna and salmon with a little soy sauce and sesame oil. Allow them to marinate for about 10-15 minutes.

Make Miso Soup
In a pot, bring 2 cups of water to a boil. Add miso paste and stir until dissolved. Add cubed tofu if desired. Simmer for a few minutes and remove from heat.

Assemble the Poke Bowl
In bowls, layer the seasoned sushi rice, marinated fish, sliced vegetables, and top with tobiko, pickled ginger, and chopped green onions.
