    Prepare the Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, let it cool to room temperature.

    Prepare the Dashi Broth

    In a pot, bring the dashi broth to a simmer. Add mirin and soy sauce to taste and set aside.

    Prepare Seasonal Vegetables

    Wash and cut seasonal vegetables into small, bite-sized pieces. Blanch or steam them lightly to retain their color and crunch.

    Slice the Fish

    Using a sharp knife, slice the sashimi-grade fish into thin pieces. Arrange them beautifully on a plate.

    Plate the Kaiseki

    On a serving platter, create an artistic arrangement of the sashimi, seasonal vegetables, and rice. Drizzle sesame oil over the vegetables and garnish with edible flowers.

    Serve

    Serve the kaiseki style dish with dashi broth on the side, along with pickled ginger and wasabi.
