    Prepare the Ingredients

    Julienne the cucumber, dice the chicken breast, and slice the shallots. Set aside.

    Cook the Noodles

    Bring a pot of water to a boil. Cook the Shanxi knife noodles according to package instructions until al dente. Drain and rinse under cold water. Set aside.

    Fry the Shallots

    In a frying pan, heat 2 tablespoons of vegetable oil over medium heat. Add the sliced shallots and fry until golden brown and crispy. Remove and drain on paper towels.

    Cook the Chicken

    In the same pan, add another tablespoon of oil. Add the minced garlic and sauté until fragrant. Then add the diced chicken, season with salt and pepper, and cook until browned and cooked through.

    Add Black Beans and Sauce

    Stir in the fermented black beans and soy sauce. Cook for an additional 2-3 minutes, allowing the flavors to meld.

    Fry the Eggs

    In a separate pan, heat 1 tablespoon of oil over medium heat. Crack the eggs into the pan and fry until the whites are set but the yolks are still runny. Remove from heat.

    Assemble the Dish

    In serving bowls, place a portion of the noodles. Top with the chicken and black bean mixture, julienned cucumber, and crispy shallots. Finish with a fried egg on top and garnish with chopped green onions.
