    Prepare the Crepe Batter

    In a bowl, whisk together flour, milk, green tea powder, eggs, melted butter, and salt until smooth. Let the batter rest for 30 minutes.

    Cook the Crepes

    Heat a non-stick skillet over medium heat. Pour a small amount of batter into the center and swirl to coat the bottom. Cook for about 1-2 minutes on each side until lightly golden. Repeat with remaining batter.

Mango Creme Anglaise

    Make the Creme Anglaise

    In a saucepan, heat the cream and milk until just below boiling. In a separate bowl, whisk together sugar and egg yolks. Gradually pour the hot cream mixture into the yolks, whisking constantly. Return to the saucepan and cook on low heat until thickened. Stir in mango puree and vanilla extract.

Roasted Chestnuts

    Roast the Chestnuts

    Preheat your oven to 400°F (200°C). Score the chestnuts and place them on a baking sheet. Roast for about 20-25 minutes until the shells split and the nuts are tender. Remove from the oven and let cool.

Assembly

    Layer the Crepe Cake

    On a serving platter, layer the crepes with a thin layer of mango creme anglaise in between each crepe. Top with roasted chestnuts, and drizzle with additional mango sauce if desired.
