    Prepare Sushi Rice

    Rinse sushi rice under cold water until the water runs clear. Cook according to package instructions. Once cooked, mix with rice vinegar, sugar, and salt while the rice is still warm. Allow to cool to room temperature.

    Prepare Fillings

    Slice hamachi, salmon, and tuna into thin strips. Cut avocado and cucumber into long strips. Finely chop shallot and cilantro. Prepare the tamago by slicing it into thin strips.

    Assemble Futomaki

    Place a bamboo sushi mat on a clean surface. Lay a sheet of nori on the mat, shiny side down. Wet your hands and spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge. Arrange hamachi, salmon, tuna, avocado, kaiware, shallot, tamago, cucumber, pickled lotus root, and masago in a line across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, roll the sushi away from you, pressing gently to keep the filling intact. Roll until the edge of the nori meets the rice. Use a little water to seal the edge of the nori.

    Slice and Serve

    Using a sharp knife, slice the roll into 6-8 pieces. Serve with mustard aioli on the side and enjoy!
