Cook the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Place the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit covered for about 10 minutes.

Prepare Sushi Vinegar
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the cooked sushi rice and gently fold to combine, being careful not to mash the rice.

Assemble the Chirashi
Place the seasoned sushi rice in a large bowl or platter. Arrange the assorted sashimi over the rice. Drizzle ponzu sauce over the sashimi and garnish with torn nori sheets.

Make the Miso Soup
In a pot, bring 4 cups of water to a boil. Add the miso paste and stir until dissolved. Add the cubed tofu and simmer for 2-3 minutes. Garnish with chopped green onions before serving.
