Method

Prepare the Salmon

1

Marinate the Salmon

In a bowl, combine lime juice, orange juice, olive oil, minced habanero pepper, salt, and black pepper. Add the salmon fillets and coat them well. Cover and marinate in the refrigerator for at least 30 minutes.

2

Cook the Salmon

Preheat the grill or a skillet over medium-high heat. Cook the marinated salmon for about 4-5 minutes on each side or until the salmon is cooked through and flakes easily with a fork.

Assemble the Sandwich

3

Prepare the Buns

While the salmon is cooking, slice the brioche buns in half and lightly toast them on the grill or in a toaster.

4

Build the Sandwich

Spread mayonnaise on the bottom half of each bun. Layer with leafy greens, sliced avocado, cooked salmon, and sliced tomato. Top with cilantro if desired, and place the other half of the bun on top.
