Prepare the Short Ribs
In a large skillet, heat olive oil over medium-high heat. Season the short ribs with salt and pepper, then sear them on all sides until browned. Remove from the skillet and set aside.
Slow Cook
In a slow cooker, combine the seared short ribs, sautéed onions and garlic, beef broth, soy sauce, Worcestershire sauce, bay leaves, and black peppercorns. Cover and cook on low for 8 hours or until the meat is tender.
Shred the Meat
Once cooked, remove the short ribs from the slow cooker and shred the meat, discarding any bones and excess fat.
Prepare the Sandwiches
Toast the French rolls and layer the shredded beef on the bottom half. Top with provolone cheese and place under the broiler until the cheese is melted.
