Method

Pudding Preparation

  1. 1

    Prepare the Dates

Chop the dates and place them in a bowl. Pour boiling water over them and let them soak for about 15 minutes until soft.

  2. 2

    Make the Batter

In a mixing bowl, cream together the butter and brown sugar until fluffy. Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.

  3. 3

    Combine Ingredients

Fold in the soaked dates along with the water, then sift in the flour, baking powder, and salt. Mix until just combined.

  4. 4

    Bake the Pudding

Preheat the oven to 180°C (350°F). Pour the batter into a greased baking dish and bake for 30-35 minutes until a skewer inserted comes out clean.

Caramel Sauce Preparation

  1. 5

    Make the Caramel Sauce

In a saucepan over medium heat, combine brown sugar and butter. Stir until melted and smooth. Slowly add the heavy cream while stirring continuously until the sauce is well combined and thickened. Add vanilla extract and mix well.

Serving

  1. 6

    Serve

Cut the sticky toffee pudding into squares, place on a plate, top with a scoop of vanilla bean ice cream, and drizzle generously with caramel sauce.
