Beef Short Ribs

Method

Cooking the Short Ribs

  1. 1

    Prepare the Ribs

Preheat your oven to 325°F (160°C). Season the short ribs with salt and black pepper.

  2. 2

    Sear the Ribs

In a large Dutch oven, heat olive oil over medium-high heat. Add the short ribs and sear on all sides until browned, about 5-7 minutes. Remove the ribs and set aside.

  3. 3

    Sauté Vegetables

In the same pot, add chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.

  4. 4

    Braise the Ribs

Return the short ribs to the pot, add beef broth, Worcestershire sauce, and bay leaves. Bring to a simmer, cover, and transfer to the preheated oven. Cook for 2.5 to 3 hours, or until the meat is tender and falling off the bone.

Assembling the Beef Dip

  1. 5

    Shred the Meat

Remove the short ribs from the pot and shred the meat using two forks. Discard the bones and bay leaves.

  2. 6

    Prepare the Baguette

Slice the French baguette and toast the slices lightly.

  3. 7

    Assemble the Sandwich

Layer shredded beef on the toasted baguette slices and top with Swiss cheese. Place under a broiler for 2-3 minutes until the cheese is melted.

  4. 8

    Serve

Serve the sandwiches with a side of the beef broth for dipping. Garnish with chopped parsley.
