Prepare Sushi Rice

Cook Sushi Rice
Rinse sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to manufacturer's instructions. Once cooked, let it cool slightly.

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Fold this mixture into the cooked rice and let it cool completely.
Make Ahi Tuna Filling

In a bowl, combine diced ahi tuna, green onions, sesame oil, soy sauce, and sriracha. Mix gently and set aside.
Prepare Spicy Mayo

In a bowl, whisk together mayonnaise, sriracha, and lime juice until smooth.
Make Soy & Ginger Sauce

In a small bowl, mix soy sauce, grated ginger, and lime juice until well combined.
Fry Sushi Rice Bites

Shape and Fry
Heat vegetable oil in a deep pan over medium-high heat. Take small portions of the sushi rice and form them into bite-sized squares or rectangles.

Fry the rice bites in batches until golden brown and crispy on all sides. Drain on paper towels.
Assemble

Top each crispy rice bite with a spoonful of the ahi tuna mixture and drizzle with spicy mayo and soy & ginger sauce. Serve immediately.
