Prepare the Risotto
In a saucepan, heat the chicken broth and keep it warm. In a separate pot, heat some oil over medium heat, add the chopped onion and garlic, and sauté until translucent. Add the Arborio rice and cook for 2 minutes, stirring constantly. Gradually add the warm chicken broth, one ladle at a time, stirring frequently until the rice is al dente. This should take about 18-20 minutes. Once done, remove from heat and let cool.

Make the Arancini Mixture
Once the risotto has cooled, stir in the grated Parmesan cheese, beaten eggs, salt, and pepper until well combined. Take a small amount of the mixture, place a cube of mozzarella in the center, and shape it into a ball. Repeat with the remaining mixture.

Fry the Arancini
In a deep frying pan, heat the vegetable oil over medium-high heat. Once hot, carefully add the arancini balls in batches and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
