Method

Make the Churro Dough

    Prepare the Dough

    In a medium saucepan, combine water and butter. Bring to a boil over medium heat. Once boiling, add flour, sugar, and salt. Stir until the mixture forms a ball and pulls away from the sides of the pan. Remove from heat and let cool slightly.

    Add Eggs

    Add eggs one at a time, mixing well after each addition until smooth. Stir in cinnamon.

Fry the Churros

    Heat Oil

    In a large pot, heat oil to 350°F (175°C).

    Pipe the Churros

    Using a piping bag fitted with a star tip, pipe 4-6 inch strips of dough into the hot oil. Fry until golden brown, about 2-3 minutes on each side.

    Drain and Coat

    Remove churros from oil and drain on paper towels. In a separate bowl, combine sugar and cinnamon. Roll warm churros in the cinnamon sugar mixture.

Assemble the Sandwich

    Scoop Ice Cream

    Once churros have cooled slightly, take two churros and place a scoop of vanilla ice cream between them to create a sandwich.

    Serve

    Enjoy immediately while the churros are warm and the ice cream is cold!
