Cooking Instructions

  1. 1

    Cook the Bacon

In a large pot over medium heat, add the diced bacon and cook until crispy. Remove the bacon and set aside, leaving the drippings in the pot.

  2. 2

    Sauté the Vegetables

Add the butter to the pot with the bacon drippings. Once melted, add the diced onion, celery, and minced garlic. Sauté until the vegetables are soft, about 5 minutes.

  3. 3

    Add Potatoes and Broth

Stir in the diced potatoes, thyme, bay leaf, and chicken broth. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.

  4. 4

    Incorporate Clams and Cream

Add the chopped clams and heavy cream to the pot. Simmer for an additional 5-10 minutes until heated through. Season with salt and black pepper to taste.

  5. 5

    Serve

Remove the bay leaf and serve the chowder hot, garnished with crispy bacon and chopped parsley.
