Preparation

    Prepare the potatoes

    Peel and chop the potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot.

    Make the mash

    Add butter and heavy cream to the potatoes. Mash until creamy, then season with salt and black pepper. Set aside.

    Cook the chorizo and corn

    In a skillet, heat 1 tbsp of olive oil over medium heat. Add diced onion and cook until translucent. Add chorizo and cook until browned. Stir in corn and cook for an additional 5 minutes.

Cooking the Mahi Mahi

    Season the fish

    Pat the Mahi Mahi fillets dry and coat both sides with blackening seasoning.

    Cook the Mahi Mahi

    In a separate skillet, heat 2 tbsp of olive oil over medium-high heat. Cook the seasoned fillets for about 4-5 minutes on each side, or until the fish is cooked through and has a blackened crust.

Serving

    Plate the dish

    Serve the blackened Mahi Mahi on a plate alongside a generous scoop of creamy mashed potatoes and a portion of chorizo and corn mixture.
