Method

Cooking the Pasta

    Boil Water

    In a large pot, bring water to a boil. Add 1 tsp of salt to the boiling water.

    Cook Pasta

    Add 200 grams of pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain and Coat

    Once cooked, drain the pasta and return it to the pot. Add 1 tbsp of olive oil and toss to coat the pasta evenly.

Preparing the Vegetables

    Sauté Garlic

    In a large skillet, heat a little olive oil over medium heat. Add 3 minced garlic cloves and sauté for about 1 minute until fragrant.

    Add Vegetables

    Add diced zucchini, bell pepper, and halved cherry tomatoes to the skillet. Sauté for 5-7 minutes until the vegetables are tender.

    Add Spinach

    Stir in the 2 cups of fresh spinach and cook until wilted, about 2 minutes.

Making the Marinara Sauce

    Combine Ingredients

    In the skillet with the vegetables, add 400 grams of canned crushed tomatoes, 1 tsp of dried oregano, and 1 tsp of dried basil.

    Season the Sauce

    Season with salt and black pepper to taste. Simmer the sauce for about 10 minutes, allowing the flavors to meld.

Combining Everything

    Mix Pasta and Sauce

    Add the cooked pasta to the skillet with the marinara sauce and vegetables. Toss everything together until well combined.

    Serve

    Serve hot, garnished with fresh basil or nutritional yeast if desired.
