Prepare the Bell Peppers
Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.

Cook the Rice
In a medium saucepan, bring 2 cups of water to a boil. Add the uncooked rice, cover, and simmer for about 18-20 minutes until the rice is tender and the water is absorbed.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté for about 3-4 minutes until softened.

Stuffing and Baking

Stuff the Peppers
Spoon the rice and bean mixture into each bell pepper, packing it tightly. Place the stuffed peppers back into the baking dish.

Add Cheese (Optional)
If desired, sprinkle shredded cheese on top of each stuffed pepper.

Serve
Remove the stuffed peppers from the oven and let them cool for a few minutes before serving. Garnish with additional cilantro if desired.
