Preparation

    Prepare the Bell Peppers

    Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.

    Cook the Rice

    In a medium saucepan, bring 2 cups of water to a boil. Add the uncooked rice, cover, and simmer for about 18-20 minutes until the rice is tender and the water is absorbed.

Filling

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté for about 3-4 minutes until softened.

    Combine Ingredients

    In the skillet, add the cooked rice, black beans, cumin, paprika, salt, black pepper, and chopped cilantro. Stir well to combine and heat through for about 5 minutes.

Stuffing and Baking

    Stuff the Peppers

    Spoon the rice and bean mixture into each bell pepper, packing it tightly. Place the stuffed peppers back into the baking dish.

    Add Cheese (Optional)

    If desired, sprinkle shredded cheese on top of each stuffed pepper.

    Bake

    Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, until the peppers are tender and the cheese is melted.

Serving

    Serve

    Remove the stuffed peppers from the oven and let them cool for a few minutes before serving. Garnish with additional cilantro if desired.
