Preparation of Pork Belly

Preheat the Oven
Preheat your oven to 160°C (320°F).

Prepare the Pork Belly
Score the skin of the pork belly in a crisscross pattern, being careful not to cut into the meat. This helps the fat render and creates a crispy texture.

Season the Pork Belly
Rub the pork belly with salt, black pepper, and garlic powder, ensuring the seasoning gets into the scored skin.

Roast the Pork Belly
Place the pork belly on a roasting rack in a baking dish. Drizzle olive oil over the skin. Roast in the preheated oven for about 2 hours, or until the meat is tender.

Crisp the Skin
Increase the oven temperature to 220°C (425°F) and roast for an additional 30 minutes or until the skin is crispy and golden brown.

Rest the Pork Belly
Remove the pork belly from the oven and let it rest for at least 15 minutes before slicing.

In a small bowl, combine soy sauce, rice vinegar, sriracha sauce, honey, and sesame oil. Whisk together until well combined.

Taste the sauce and adjust the sriracha according to your preferred spice level. Add more honey if you prefer it sweeter.
