Fried Green Tomatoes

Prepare the Tomatoes
Wash the green tomatoes and slice them into 1/4 inch thick slices. Sprinkle salt on both sides and let them sit for about 10 minutes to draw out moisture.

Set Up Breading Station
In one bowl, place the flour mixed with black pepper, cayenne pepper, and salt. In another bowl, pour the buttermilk. In a third bowl, place the cornmeal.

Bread the Tomatoes
Dredge each tomato slice in the flour, shaking off the excess. Dip it in the buttermilk, and then coat it with cornmeal, pressing gently to adhere.

Fry the Tomatoes
In a heavy skillet, heat vegetable oil over medium-high heat until hot. Fry the breaded tomato slices in batches, about 3-4 minutes per side or until golden brown. Drain on paper towels.
Spicy Remoulade

Mix Ingredients
In a medium bowl, combine mayonnaise, Dijon mustard, hot sauce, chopped capers, garlic powder, paprika, salt, and black pepper. Mix well until smooth.

Chill
Cover the remoulade and refrigerate for at least 30 minutes to allow the flavors to meld.
