Fried Calamari

Prepare the Calamari
Clean and slice the fresh calamari into rings, about 1/2 inch thick.

Make the Breading Mixture
In a bowl, combine all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Mix well.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Dip each calamari ring first into the wet mixture, then into the breading mixture, ensuring they are well-coated.

Fry the Calamari
Carefully drop the coated calamari into the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove with a slotted spoon and place on paper towels to drain excess oil.
Marinara Sauce

Sauté Garlic
In a saucepan, heat olive oil over medium heat. Add minced garlic cloves and sauté until fragrant, about 1 minute.

Add Tomatoes and Season
Add the canned crushed tomatoes, dried oregano, salt, and black pepper to the saucepan. Stir well to combine.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

Finish the Sauce
Stir in the fresh basil leaves just before serving.
