Cake Batter
For Greasing
Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C).
- 2
Prepare Ramekins
Grease four 6-ounce ramekins with 2 tablespoons of unsalted butter. Dust the insides with cocoa powder to prevent sticking.
Making the Batter
- 3
Melt Chocolate and Butter
In a microwave-safe bowl, combine the 1 cup of unsalted butter and 8 oz of dark chocolate. Melt in the microwave in 30-second intervals, stirring in between, until smooth.
- 4
Mix Sugar and Eggs
In a large mixing bowl, whisk together 1 cup of granulated sugar, 2 large eggs, and 2 large egg yolks until well combined.
- 5
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture, stirring constantly. Add 2 tsp of vanilla extract and mix well.
- 6
Add Dry Ingredients
Sift in 1 tablespoon of all-purpose flour and a pinch of salt to the chocolate-egg mixture. Fold gently until just combined.
Baking
- 7
Fill Ramekins
Divide the batter evenly among the greased ramekins, filling each about 3/4 full.
- 8
Bake the Cakes
Place the ramekins on a baking sheet and bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is still soft.
- 9
Cool Slightly
Once baked, remove from the oven and let sit for 1 minute. Gently run a knife around the edges of the ramekins.
- 10
Serve
Invert the ramekins onto individual plates and tap gently to release the cakes. Serve immediately, optionally with ice cream or whipped cream.
