Pie Crust Preparation

Make the Pie Dough
In a large bowl, mix the flour, sugar, and salt together.

Cut in Butter
Cut the cold butter into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Add Ice Water
Gradually add ice water, one tablespoon at a time, mixing until the dough holds together without being sticky.

Chill the Dough
Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Apples
Peel, core, and slice the Granny Smith apples into thin slices.

Mix the Filling
In a large bowl, combine the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss until the apples are well coated.
Assembling the Pie

Preheat the Oven
Preheat your oven to 425°F (220°C).

Roll Out the Crust
On a floured surface, roll out one disk of dough to fit a 9-inch pie plate. Place it in the pie plate, pressing it into the bottom and sides.

Add the Filling
Pour the apple filling into the prepared pie crust, spreading it evenly.

Top the Pie
Roll out the second disk of dough and place it over the apple filling. Seal the edges by crimping them together with your fingers or a fork. Cut slits in the top crust to allow steam to escape.

Brush and Sugar
Melt the tablespoon of butter and mix it with milk. Brush this mixture over the top crust and sprinkle with granulated sugar.

Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
