Preparation of Chicken

Preheat the Oven
Preheat your oven to 375°F (190°C).

Season the Chicken
In a bowl, combine the olive oil, garlic powder, paprika, salt, and black pepper. Rub this mixture over the boneless chicken breasts until well coated.

Bake the Chicken
Place the seasoned chicken breasts on a baking sheet lined with parchment paper. Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).

Prepare the Vegetables
While the chicken is baking, wash and chop the broccoli, carrot, bell pepper, and zucchini. Set aside.

Make the Sauce
In a small bowl, mix the chicken broth, soy sauce, cornstarch, honey, and minced ginger until the cornstarch is fully dissolved.
Combine and Serve

Combine Ingredients
In a large skillet over medium heat, add the chopped vegetables. Sauté for about 5-7 minutes until they are tender but still crisp.

Pour the sauce over the sautéed vegetables and cook for an additional 2-3 minutes, stirring frequently until the sauce thickens.

Slice the baked chicken and serve it on a plate with the sautéed vegetables topped with the light sauce.
