Marinating the Chicken

    Prepare the Marinade

    In a large bowl, combine the plain yogurt, garam masala, ground cumin, ground coriander, turmeric powder, cayenne pepper, salt, lemon juice, minced garlic, and minced ginger. Mix well to create a marinade.

    Marinate Chicken

    Add the boneless chicken thighs to the marinade. Ensure all pieces are coated evenly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour (or overnight for best results).

Cooking the Chicken

    Cook the Chicken

    Heat a grill pan or skillet over medium-high heat. Add a little oil if needed. Remove the chicken from the marinade, shaking off excess, and cook for about 5-7 minutes on each side, or until fully cooked. Remove from heat and set aside.

Making the Sauce

    Sauté Onions and Aromatics

    In a large saucepan, heat the vegetable oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Add the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

    Add Tomatoes and Simmer

    Pour in the canned crushed tomatoes, and stir well. Season with salt and black pepper. Bring to a gentle simmer and let cook for about 10 minutes, stirring occasionally.

    Add Cream and Chicken

    Reduce the heat to low, and stir in the heavy cream. Add the grilled chicken pieces to the sauce and simmer for another 5-10 minutes, allowing the flavors to meld.

    Finish with Coriander

    Stir in the chopped coriander leaves just before serving for a fresh burst of flavor.
