    Marinate the Lamb

    In a large bowl, combine the cubed lamb with yogurt, ground coriander, ground cumin, paprika, ground turmeric, garam masala, red chili powder, and salt. Mix well to coat the lamb evenly. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

    Sauté Aromatics

    In a large pot or Dutch oven, heat the cooking oil over medium heat. Add the finely chopped onions and sauté until they turn golden brown, about 8-10 minutes.

    Add Garlic and Ginger

    Stir in the minced garlic, grated ginger, and slit green chilies. Sauté for another 2-3 minutes until fragrant.

    Brown the Lamb

    Add the marinated lamb to the pot. Cook, stirring occasionally, until the lamb is browned on all sides, about 10-12 minutes.

    Add Water

    Pour in the water, bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the lamb is tender.

    Final Seasoning

    Check for seasoning and adjust salt if needed. Once the lamb is tender and the sauce has thickened, remove from heat.

    Garnish with chopped fresh cilantro and serve hot with rice or naan.
