Make the Dough
In a large bowl, mix the all-purpose flour and salt. Add the oil and rub it into the flour until the mixture resembles coarse crumbs.

Knead the Dough
Gradually add water to the flour mixture, kneading until a smooth and firm dough forms. Cover the dough with a damp cloth and let it rest for 30 minutes.

Mix Ingredients
Add ginger, green chili, coriander powder, garam masala, and salt to the onions. Stir well and cook for a few minutes before adding the mashed potatoes and peas. Mix everything thoroughly and cook for another 5 minutes. Remove from heat and let it cool.

Shape the Samosas
Divide the dough into small balls. Roll each ball into a thin circle (about 6 inches in diameter). Cut the circle in half to form two semi-circles.

Fill the Samosas
Take one semi-circle, and form a cone shape by folding it. Seal the edge with water. Fill the cone with the potato and pea filling, and then seal the open edge by pressing it together with water.

Fry the Samosas
Heat oil in a deep frying pan over medium heat. Once hot, carefully add the samosas in batches. Fry until they are golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
