Preparation

    Chop the Vegetables

    Wash and chop the carrots, potatoes, bell pepper, green beans, and cauliflower into bite-sized pieces.

    Prepare the Aromatics

    Finely chop the onion, garlic, and ginger.

Cooking

    Heat the Oil

    In a large pot, heat 2 tablespoons of vegetable oil over medium heat.

    Sauté Aromatics

    Add the chopped onions to the pot and sauté until they become translucent, about 5 minutes. Then add the minced garlic and ginger, and cook for an additional 1-2 minutes.

    Spice it Up

    Stir in the cumin seeds, curry powder, turmeric powder, and chili powder. Cook for 1 minute until fragrant.

    Add Vegetables

    Add the chopped carrots, potatoes, bell pepper, green beans, and cauliflower to the pot. Stir well to coat the vegetables with the spices.

    Pour in Coconut Milk

    Pour in the can of coconut milk and stir to combine. Add salt to taste.

    Simmer

    Bring the mixture to a gentle simmer. Cover the pot and let it cook for about 20-25 minutes, or until the vegetables are tender.

    Serve

    Once the vegetables are tender, taste and adjust seasoning if needed. Serve hot with rice or naan.
