Prepare Spinach

Blanch Spinach
In a large pot of boiling water, add the fresh spinach and blanch for about 2-3 minutes until wilted. Drain and immediately transfer to ice water to stop cooking.

Blend Spinach
Once cooled, drain the spinach again and blend it into a smooth paste. Set aside.
Cook the Mixture

Add Garlic and Ginger
Stir in the minced garlic, grated ginger, and chopped green chili. Cook for another 1-2 minutes until fragrant.

Add Spinach and Spices
Add the blended spinach paste to the pan. Stir in the turmeric powder, garam masala, and salt. Mix well and let it cook for about 5-6 minutes.
Add Paneer

Incorporate Paneer
Add the cubed paneer to the spinach mixture. Gently fold in to combine without breaking the paneer.

Add Cream
Pour in the heavy cream and stir gently to combine. Let it simmer for another 2-3 minutes until heated through.
Serve

Plating
Serve hot with naan or rice. Garnish with a drizzle of cream if desired.
