Prepare the Spinach
Wash the fresh spinach leaves thoroughly under running water. Drain and chop them coarsely.

Mix Ingredients
In a large mixing bowl, combine the chopped spinach, chickpea flour, rice flour, chopped onion, grated ginger, minced garlic, finely chopped green chilies, cumin seeds, turmeric powder, and salt.

Add Water
Gradually add water to the mixture, stirring continuously until a thick batter forms. The batter should be thick enough to hold the fritters together.
Frying

Heat Oil
In a deep frying pan, heat the oil over medium heat until hot.

Fry the Pakoras
Using a spoon, drop small portions of the batter into the hot oil. Fry them in batches, cooking until they are golden brown and crispy, about 4-5 minutes per batch.

Drain Excess Oil
Once cooked, remove the pakoras from the oil and place them on a paper towel to drain excess oil.
Serving

Serve Hot
Serve the saag pakoras hot with mint chutney or tamarind sauce for dipping.
