    In a large mixing bowl, combine the urid lentil flour, black pepper, and salt. Mix the dry ingredients thoroughly.

    Gradually add water to the mixture while stirring. Knead it into a smooth, stiff dough. If needed, add a little more water to achieve the desired consistency.

    Form the Papadams

    Divide the dough into small balls (about the size of a golf ball). On a flat surface, use a rolling pin to roll each ball into a thin, round disc, approximately 5-6 inches in diameter. Ensure they are evenly rolled for consistent cooking.

    Drying the Papadams

    Lay the rolled papadams on a clean cloth or tray and let them air dry completely, preferably in a warm place, for about 2-3 hours. This step is crucial for achieving the right texture.

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium heat until it is hot but not smoking.

    Fry the Papadams

    Carefully slide one papadam into the hot oil. Fry each side for about 30 seconds or until it puffs up and turns golden brown. Remove with a slotted spoon and place on a plate lined with paper towels to absorb excess oil.

    Continue the frying process with the remaining papadams, adjusting the heat as necessary to ensure they cook evenly.
