Preparation

    Prepare the Spinach

    If using fresh spinach, wash and blanch it in boiling water for 2-3 minutes until wilted. Drain and immediately transfer to ice water to stop the cooking process. If using frozen spinach, thaw and squeeze out excess water.

    Make the Paneer

    Cut the paneer into cubes. If desired, lightly fry the paneer cubes in a pan with a little oil until golden brown on all sides, then set aside.

    Sauté Aromatics

    In a large pan, heat the oil or ghee over medium heat. Add cumin seeds and let them splutter. Then, add the chopped onion and sauté until golden brown.

    Add Ginger, Garlic, and Green Chili

    Stir in the grated ginger, minced garlic, and slit green chili. Cook for another 1-2 minutes until fragrant.

    Incorporate Tomatoes and Spices

    Add the pureed tomato, turmeric powder, coriander powder, and salt. Cook until the oil starts to separate from the mixture, about 5-7 minutes.

    Add Spinach

    Blend the blanched spinach into a smooth puree using a blender. Add this puree to the pan and mix well. Simmer for 5 minutes over low heat.

    Add Paneer and Cream

    Gently fold in the paneer cubes and, if using, the cream. Cook for another 2-3 minutes until everything is heated through.

    Finish with Garam Masala

    Sprinkle garam masala over the curry and mix well. Adjust salt to taste.
