Preparation of Vegetables

Slice the Onions
Peel and thinly slice the large onions and set them aside in a mixing bowl.

Combine Dry Ingredients
In a separate bowl, whisk together the chickpea flour, rice flour, turmeric powder, cumin powder, baking soda, and salt.

Add Water
Gradually add water to the dry mixture, stirring continuously until you achieve a smooth batter without lumps.

Mix with Vegetables
Pour the prepared batter over the sliced onions, chilies, and coriander. Mix well, ensuring all the vegetables are coated.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium heat until it reaches about 350°F (175°C).

Fry the Bhajis
Scoop small portions of the batter-coated onions and carefully drop them into the hot oil. Fry in batches to avoid overcrowding.

Cook Until Golden Brown
Fry the bhajis for about 4-5 minutes or until they turn golden brown and crispy. Flip them halfway through cooking for even browning.

Drain Excess Oil
Once cooked, remove the bhajis from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
