Samosa

Make the Dough
In a mixing bowl, combine all-purpose flour, salt, and 2 tablespoons of oil. Mix well and gradually add water to form a smooth dough. Cover and set aside for 30 minutes.

Prepare the Filling
Boil and mash the potatoes, then mix in peas, cumin seeds, coriander powder, garam masala, chopped green chilies, and salt.

Shape the Samosas
Divide the dough into equal parts. Roll each part into a thin oval, cut in half, and shape into a cone. Fill with the potato mixture and seal the edges.

Fry the Samosas
Heat oil in a pan, fry the samosas until golden brown, and drain on paper towels.
Tikki

Shape the Tikkis
Divide the mixture into small portions and shape them into flat round patties.

Fry the Tikkis
Heat oil in a frying pan. Fry the tikkis until golden brown on both sides.
Pakora

Fry the Pakoras
Heat oil in a deep frying pan. Drop spoonfuls of the batter into the hot oil and fry until golden brown. Drain on paper towels.
Paneer Pakora

Prepare the Batter
In a bowl, mix gram flour, salt, and chopped green chilies with enough water to form a smooth batter.

Slice and Fry Paneer
Cut paneer into slices, dip them in the batter, and fry in hot oil until golden brown. Drain on paper towels.
Papadam

Fry or Roast Papad
Heat oil in a pan for frying or use an open flame to roast the papad until crisp. Serve immediately.
