Preparation of Ingredients

    Prepare the Vegetables

    Wash, peel, and chop all the vegetables (carrot, green beans, cauliflower, peas, and potato) into bite-sized pieces.

    Make Paneer

    If not using store-bought paneer, prepare homemade paneer by boiling milk and curdling it with lemon juice. Strain, press, and cut it into cubes.

    Soak Nuts and Raisins

    Soak cashews, almonds, and raisins in warm water for about 30 minutes to soften them.

Cooking

    Heat the Oil

    In a large pan or kadhai, heat the oil or ghee over medium heat.

    Sauté Spices

    Add cardamom pods and cloves to the hot oil. Sauté for about 30 seconds until fragrant.

    Add Ginger

    Stir in the grated ginger and sauté for an additional minute.

    Cook Vegetables

    Add the chopped vegetables to the pan. Stir well and cook for about 5 minutes.

    Add Spices

    Sprinkle turmeric, cumin, coriander, and salt over the vegetables. Mix thoroughly and cook for another 3-4 minutes.

    Add Water

    Pour in the water, cover the pan, and let the vegetables simmer for about 10 minutes, or until they are tender.

    Add Paneer and Nuts

    Once the vegetables are tender, add the paneer cubes, soaked cashews, almonds, and raisins. Stir gently to combine.

    Final Simmer

    Cover the pan and let the korma simmer for another 5 minutes to allow the flavors to meld.
