Marinating the Chicken

Step 1: Prepare the Marinade
In a large bowl, combine yogurt, ginger paste, garlic paste, turmeric powder, red chili powder, and salt. Mix well.

Add the chicken thighs to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for best results.
Cooking the Korma

Step 3: Prepare the Korma Sauce
In a blender, grind the cashews and almonds into a smooth paste using a little water if necessary.

Step 5: Cook the Chicken
Add the marinated chicken to the pan and cook for about 10 minutes, stirring occasionally until the chicken is browned on all sides.

Step 6: Combine with Sauce
Add the cashew-almond paste and garam masala to the pan, stirring well. Cook for another 5 minutes.

Pour in the coconut milk or light cream. Stir to combine, reduce the heat to low, and let it simmer for 15 minutes, or until the chicken is cooked through and tender.

Garnish with chopped fresh cilantro before serving. Serve hot with rice or naan.
