    Prepare the Ingredients

    Peel and cube the potatoes into small pieces. Chop the tomatoes, onion, garlic, and ginger finely. Rinse the spinach thoroughly and roughly chop it.

Cooking

    Sauté the Aromatics

    In a large pan, heat the vegetable oil over medium heat. Add cumin seeds and let them sizzle for a few seconds. Add the chopped onion, garlic, and ginger. Sauté until the onion becomes translucent.

    Cook the Tomatoes

    Add the chopped tomatoes to the pan. Cook until the tomatoes soften and release their juices.

    Add the Potatoes and Spices

    Stir in the cubed potatoes, turmeric powder, red chili powder, salt, and cinnamon powder. Mix well to coat the potatoes with the spices.

    Simmer

    Cover the pan and allow the potatoes to cook for about 15 minutes, stirring occasionally, until they are tender and cooked through.

    Add Spinach and Cream

    Once the potatoes are cooked, add the chopped spinach and light cream to the pan. Stir gently to combine everything. Let it cook for another 5 minutes.

    Finish with Garam Masala

    Sprinkle garam masala over the dish, stir, and cook for an additional minute before removing from heat.
