Soup Preparation

    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add Tomatoes and Broth

    Pour in the canned tomatoes (with their juices) and the vegetable broth. Bring the mixture to a simmer.

    Blend the Soup

    After the soup has simmered for about 10 minutes, remove it from the heat. Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender and puree until smooth.

    Add Basil and Season

    Stir in the fresh basil leaves, salt, and black pepper. Adjust seasoning to taste. If the soup is too thick, you can add a little more broth or water.

    Serve

    Ladle the soup into bowls and top with house-made croutons and shaved Parmesan cheese. Enjoy!
