    Prepare the Potatoes

    Wash and dice the potatoes into small cubes. In a large pot, cover the potatoes with water and bring to a boil. Boil until tender, about 10 minutes. Drain and set aside.

    Crispy Spiced Potatoes

    In a large skillet, heat 2 tablespoons of butter over medium-high heat. Add the boiled potatoes and season with salt, pepper, and fresh parsley. Sauté until golden and crispy, about 5-7 minutes. Remove from heat and keep warm.

    Cook the Steak

    Season the flat iron steaks with salt and pepper. In the same skillet, add the remaining butter and heat over medium-high heat. Add the steaks and cook for about 4-5 minutes per side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes.

    Fry the Eggs

    In a separate non-stick skillet, heat a little butter over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes for over medium. Season with salt and pepper.

    Plate and Serve

    Slice the rested steak and plate it alongside the crispy spiced potatoes. Top with the fried eggs and drizzle with Béarnaise sauce. Garnish with additional parsley if desired.
