Prepare the crust
Preheat the oven to 325°F (160°C). In a medium bowl, combine graham cracker crumbs, melted butter, and salt. Mix until well combined and press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and set aside to cool.

Make the cheesecake filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add in the sugar and mix until well combined. Add sour cream and vanilla extract, mixing until smooth. Add the eggs one at a time, mixing on low speed after each addition until just combined.

Bake the cheesecake
Pour the cheesecake filling over the prepared crust. Bake in the preheated oven for 55-60 minutes or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.

Chill the cheesecake
Remove the cheesecake from the oven and let it cool to room temperature. Cover and refrigerate for at least 4 hours, preferably overnight.

Add toppings
Before serving, add your choice of rotational toppings such as fresh fruit, chocolate sauce, or caramel sauce.
