Method

Preparation Steps

  1. 1

    Prepare the Corn

In a skillet over medium-high heat, add the corn and blister it until charred, stirring occasionally. This should take about 5-7 minutes. Set aside.

  2. 2

    Prepare the Bacon

If you don't have candied bacon, you can make it by baking bacon slices coated in brown sugar at 375°F (190°C) for 15-20 minutes until crispy. Allow to cool and chop into pieces.

  3. 3

    Assemble the Wedge Salad

On a plate, place a wedge of romaine lettuce. Top with crumbled bleu cheese, candied bacon, and blistered corn.

  4. 4

    Add Toppings

Spoon the spicy tomato jam over the top and sprinkle with candied pecans. Drizzle with bleu cheese dressing.

  5. 5

    Serve

Serve immediately as a side or main dish.
