    Prepare the Ingredients

    Thinly slice the house-made corned beef and set aside. Drain and rinse the sauerkraut to remove excess liquid.

    Assemble the Sandwich

    Lay out four slices of rye bread. Spread a generous layer of Thousand Island dressing on each slice. Top with a layer of corned beef, followed by Swiss cheese and sauerkraut. Add another slice of rye bread on top for each sandwich.

    Grill the Sandwich

    Preheat a skillet or griddle over medium heat. Butter the outer sides of each sandwich. Place the sandwiches in the skillet and grill for about 4-5 minutes on each side, or until the bread is golden brown and the cheese is melted.

    Remove the sandwiches from the skillet, slice them in half, and serve warm with extra Thousand Island dressing on the side.
