    Preheat your oven to 350°F (175°C). Crush the Lorna Doone cookies into fine crumbs. In a bowl, mix the cookie crumbs with melted butter until well combined. Press the mixture firmly into the bottom of a greased 9x9 inch baking pan to form the crust. Bake for 10 minutes and then remove from oven.

    Make the Brownie Batter

    In a large mixing bowl, combine the Ghirardelli Triple Chocolate Brownie mix, eggs, water, and vegetable oil. Stir until just combined and the batter is smooth.

    Bake the Brownies

    Pour the brownie batter over the baked cookie crust, spreading it evenly. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Allow brownies to cool in the pan.

    Add Marshmallow Fluff

    Once the brownies are cool, spread the marshmallow fluff evenly over the top of the brownies.

    Toast the Marshmallows

    Using a kitchen torch or broiler, toast the marshmallow fluff until golden brown. Be careful not to burn it.

    Cut the brownies into squares and serve each piece with a scoop of vanilla bean ice cream on top.
