Dumpling Preparation

Prepare the Filling
In a large bowl, combine minced Wagyu beef, minced shallots, minced garlic, grated ginger, soy sauce, and sesame oil. Mix well until all ingredients are evenly distributed.

Fill the Dumplings
Take a wonton wrapper and place a small spoonful of the filling in the center. Moisten the edges with water, fold the wrapper over to form a triangle, and press the edges to seal tightly. Repeat with remaining wrappers and filling.

Cook the Dumplings
Bring a pot of water to a boil. Carefully add the dumplings and cook for about 4-5 minutes or until they float to the surface and are cooked through. Remove with a slotted spoon and set aside.

Prepare the Kanzuri-Miso Broth
In a separate pot, combine 4 cups of water, 3 tbs of miso paste, 1 tbs of kanzuri (Japanese chili paste), and bring to a simmer. Stir until miso is dissolved.

Serve
Ladle the kanzuri-miso broth into bowls, add the cooked dumplings, and garnish with sliced green onions. Serve hot.
