Prepare the Egg Mixture
In a mixing bowl, whisk together the eggs, soy sauce, sugar, mirin, and salt until well combined.

Heat the Pan
Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil, swirling to coat the bottom of the pan.

Roll the Omelet
Using a spatula, gently roll the omelet towards one side of the skillet. Add another tablespoon of oil to the empty side of the pan, and pour in another portion of the egg mixture. Lift the rolled omelet to let the uncooked egg flow underneath.

Repeat Cooking
Once the second layer has set slightly (about 1-2 minutes), roll the first omelet back over the new layer. Repeat this process until all the egg mixture is used.

Serve
Once cooked, transfer the omelet to a cutting board. Let it cool slightly before slicing into pieces. Garnish with chopped green onions if desired.
