Preparation Directions
1. Prepare the Octopus
In a large pot, bring water to a boil. Add sea salt and the octopus. Boil for 1-2 minutes, then remove from heat. Allow the octopus to cool in the water.
2. Marinate the Octopus
Once cooled, slice the octopus into bite-sized pieces. In a bowl, mix together sake, mirin, soy sauce, and dashi stock. Add the octopus pieces and let marinate for at least 30 minutes.
3. Prepare the Garnish
Finely chop green onions and shiso leaves. Set aside.
4. Cook the Octopus
Heat sesame oil in a pan over medium heat. Add the marinated octopus pieces and cook for 5-7 minutes until heated through.
5. Serve
Plate the cooked octopus, garnishing with green onions and shiso leaves. Serve with wasabi on the side.
