Marinate the Salmon
In a bowl, mix the soy sauce, mirin, koji rice, sesame oil, salt, and black pepper. Place the salmon fillet in the marinade and ensure it is well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Cedar Plank
Soak the cedar plank in water for at least 1 hour before cooking to prevent it from burning.

Preheat the Oven
Preheat your oven to 400°F (200°C).

Roast the Salmon
Place the soaked cedar plank on a baking sheet. Remove the salmon from the marinade, letting excess marinade drip off. Place the salmon skin-side down on the cedar plank. Roast in the preheated oven for about 20-25 minutes or until the salmon is cooked through and flakes easily with a fork.

Serve
Remove the salmon from the oven and let it rest for a few minutes. Top with ikura and a drizzle of Japanese mustard before slicing and serving.
