    Prepare the Black Garlic Tosazu

    In a small bowl, mash the black garlic cloves into a paste. Mix in the soy sauce, mirin, dashi stock, and sesame oil until well combined. Set aside.

    Heat the River Stone

    Place the hot river stone on a heat-safe surface and heat it until it is very hot. This can take about 15 to 20 minutes depending on the size of the stone.

    Season the Wagyu Beef

    While the stone is heating, season the Wagyu beef steak with salt and black pepper on both sides.

    Cook the Wagyu on the Stone

    Once the stone is hot, carefully place the Wagyu steak on the stone. Cook for about 1-2 minutes on each side for medium-rare, adjusting time according to your preferred doneness.

    Serve with Tosazu

    Once cooked to your liking, remove the steak from the stone and let it rest for a minute. Slice the steak against the grain and serve with the black garlic tosazu on the side for dipping.
