Noodles and Dipping Sauce

Preparation and Serving

Cook the Noodles
Bring a large pot of water to a boil. Add the cha soba noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Dipping Sauce
In a small saucepan, combine the soy sauce, dashi stock, mirin, and sugar. Bring to a simmer over medium heat, stirring until the sugar has dissolved. Add the sliced mushrooms and cook for 2-3 minutes until softened. Remove from heat and let cool.

Prepare the Garnishes
Chop the scallions into fine pieces and set aside.

Serve
Arrange the chilled cha soba noodles on a plate. Serve with the mushroom-shoyu tsuyu in a small bowl for dipping. Garnish with chopped scallions and a small amount of wasabi on the side.
