Prepare the Wagyu Beef
Using a sharp knife, thinly slice the Wagyu beef against the grain into very thin pieces. Arrange the slices on a chilled plate in a circular pattern.

Make the Yuzu Soy Dressing
In a small bowl, combine yuzu juice, soy sauce, and sesame oil. Mix well to combine.

Drizzle with Oils
Drizzle the yuzu soy dressing over the arranged beef slices. Follow with a drizzle of hot chili oil to taste.

Sprinkle sea salt and freshly cracked black pepper over the carpaccio to enhance the flavors.

Garnish the dish with fresh mitsuba leaves for a fragrant finish.
