Prepare the Salmon
Place the salmon fillet in the freezer for about 15-20 minutes to firm up. Once firm, slice the salmon very thinly using a sharp knife.

Make the Dressing
In a small bowl, whisk together the yuzu juice, soy sauce, and hot sesame oil until well combined.

Plate the Carpaccio
Arrange the thin slices of salmon on a serving plate, slightly overlapping them.

Add Seasoning
Drizzle the yuzu soy dressing over the salmon slices. Sprinkle with sea salt and freshly ground black pepper to taste.

Finish by garnishing with fresh mitsuba leaves scattered on top.
